DIY Kodiak Cake Flapjack and Waffle Mix

In case you haven’t already figured it out, I kinda love breakfast food. Like…all of it! I love the convenience of Kodiak mix and the fact that they use simple real ingredients. Since it seemed so simple, I went searching for a version I could make at home! After a few adjustments, I found one that is a total winner. Throw the mix together on a lazy Saturday and have quick and easy homemade breakfast for days to come!

A simple DIY version of the popular Kodiak cake mix!

  1. 4 cups whole wheat flour
  2. 1 cup whole wheat pastry flour (or regular all purpose would work too)
  3. 3 1/2 cups old fashioned oats
  4. 3 T. baking powder
  5. 3 T. coconut sugar (or sub brown sugar)
  6. 1 T. salt
  7. 1 T. baking soda
  8. 1 T. cinnamon (optional but our family loves it!)
  9. 1 cup canola oil
  1. Pulse oats in a blender until a fine oat flour forms
  2. Combine oats with other remaining ingredients, except oil.
  3. Stir to combine.
  4. Slowly pour in oil until completely incorporated in the mix.
  5. Store in an airtight container in the fridge or freezer. The mix will keep indefinitely!
To Make Pancakes/Waffles
Combine 1 cup mix with the following
  1. 1/2 cup milk (almond milk works too)
  2. 1/3 cup plain greek yogurt (for the protein!)
  3. 1 large egg
  4. 1 tsp vanilla
  5. Stir just until combined and let sit while your pan or waffle iron heats up.
  6. Use about 1/4 cup batter per waffle/pancake and cook until golden on each side!
  7. Add your favorite toppings and eat up! We like a little yogurt and fresh raspberries or peaches and whipped cream! Peanut butter and applesauce is also a favorite among the little ones!
  8. Each cup of mix will yield approximately 8 medium waffles
  1. Store any extra pancakes or waffles in the freezer and reheat in the toaster for an easy breakfast another day!
